- Gluten-free all-purpose flour - 150 grams
- Ground cinnamon - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 50 ml
- White wine - 50 ml
- Honey - 100 grams
- Sesame seeds - 1 tablespoon
- Water - 1/2 liter for frying
Steps
- In a mixing bowl, combine the gluten-free all-purpose flour, ground cinnamon, baking powder, and salt.
- Add the olive oil and white wine to the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes or until smooth. Wrap it in plastic wrap and let it rest for 30 minutes.
- Divide the dough into small pieces and roll each piece into a thin oval shape, about 2 mm thick.
- Fold each oval in half to form a semi-circle, then twist the ends to create a spiral shape. Secure the ends by pinching them together.
- In a deep pan, heat the water for frying over medium heat until hot (about 180°C). Fry the pestiños in batches until golden brown, about 2-3 minutes each side.
- Using a slotted spoon, remove the pestiños and drain them on paper towels.
- In a small saucepan, gently heat the honey until it becomes runny. Drizzle the honey over the warm pestiños and sprinkle with sesame seeds before serving.
