Ingredients
- Pork shoulder - 500 grams
- Garlic - 4 cloves, minced
- Onion powder - 1 teaspoon
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Orange juice - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
Steps
- In a bowl, combine minced garlic, onion powder, cumin, oregano, paprika, salt, black pepper, olive oil, lemon juice, and orange juice to create a marinade.
- Place the pork shoulder in a resealable bag or a dish and pour the marinade over it, ensuring the meat is well coated. Marinate in the refrigerator for at least 4 hours, preferably overnight.
- Preheat the oven to 160°C (325°F). Remove the pork from the marinade and place it in a roasting pan.
- Cover the pork shoulder with aluminum foil and roast for 2 hours. Then, remove the foil and increase the temperature to 220°C (425°F) for an additional 30 minutes to achieve a crispy skin.
- Once cooked, remove from the oven and let the pork rest for 10 minutes before slicing. Serve with chopped fresh cilantro on top.
