Ingredients

  • Chicken breasts - 2 pieces (about 300g each)
  • Garlic - 6 cloves, minced
  • Olive oil - 4 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 100ml

Steps

  1. Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, and paprika.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining olive oil and minced garlic. Sauté the garlic for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Pour in the vegetable broth and lemon juice, scraping any bits off the bottom of the pan. Bring to a simmer.
  5. Return the chicken to the skillet, spooning the garlic sauce over the top. Cook for an additional 2-3 minutes to heat through.
  6. Remove from heat and sprinkle with fresh parsley before serving.
