- Green bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat the grill or a grill pan over medium-high heat.
- In a bowl, mix the olive oil, minced garlic, paprika, salt, and black pepper to create a marinade.
- Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.
- While the chicken is marinating, toss the sliced bell peppers in a little olive oil, salt, and pepper.
- Place the marinated chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
- In the last 5 minutes of cooking, add the bell peppers to the grill and cook until tender and slightly charred.
- Once cooked, remove the chicken and peppers from the grill and let them rest for a few minutes.
- Slice the chicken and serve it on a plate with the grilled peppers on the side, garnished with chopped parsley.
