Ingredients

  • Duck breast - 2 pieces (about 300g each)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Honey - 1 teaspoon

Steps

  1. In a bowl, mix olive oil, minced garlic, rosemary, thyme, paprika, salt, black pepper, lemon juice, and honey to create a marinade.
  2. Score the skin of the duck breasts in a criss-cross pattern, being careful not to cut into the meat.
  3. Rub the marinade all over the duck breasts, ensuring it gets into the scored skin. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your BBQ grill to medium-high heat.
  5. Place the duck breasts skin-side down on the grill. Cook for about 6-8 minutes, or until the skin is crispy and golden brown.
  6. Flip the duck breasts and reduce the heat to medium. Continue cooking for another 6-8 minutes, or until the internal temperature reaches 65°C (149°F).
  7. Remove the duck from the grill and let it rest for 5 minutes before slicing.
  8. Serve the sliced duck with a side of grilled vegetables or a fresh salad.
