Ingredients
- Duck breast - 2 pieces (about 300g each)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Honey - 1 teaspoon
Steps
- In a bowl, mix olive oil, minced garlic, rosemary, thyme, paprika, salt, black pepper, lemon juice, and honey to create a marinade.
- Score the skin of the duck breasts in a criss-cross pattern, being careful not to cut into the meat.
- Rub the marinade all over the duck breasts, ensuring it gets into the scored skin. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your BBQ grill to medium-high heat.
- Place the duck breasts skin-side down on the grill. Cook for about 6-8 minutes, or until the skin is crispy and golden brown.
- Flip the duck breasts and reduce the heat to medium. Continue cooking for another 6-8 minutes, or until the internal temperature reaches 65°C (149°F).
- Remove the duck from the grill and let it rest for 5 minutes before slicing.
- Serve the sliced duck with a side of grilled vegetables or a fresh salad.
