- Potatoes - 500 grams
- Olive oil - 4 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Canned tomatoes - 200 grams
- Chili flakes - 1/2 teaspoon
- Vinegar (red wine or apple cider) - 1 tablespoon
- Fresh parsley - for garnish
- Silken tofu - 100 grams
- Lemon juice - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Garlic (minced) - 1 clove
Steps
- Preheat the oven to 200°C (390°F).
- Wash and peel the potatoes, then cut them into bite-sized cubes.
- In a large bowl, toss the potato cubes with 2 tablespoons of olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
- Spread the potatoes on a baking sheet and bake for 25-30 minutes, or until golden and crispy, flipping halfway through.
- While the potatoes are baking, prepare the sauce by heating the remaining olive oil in a saucepan over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Stir in the canned tomatoes, chili flakes, vinegar, and a pinch of salt. Simmer for about 10 minutes until slightly thickened.
- For the vegan aioli, blend the silken tofu, lemon juice, nutritional yeast, and a pinch of salt in a food processor until smooth and creamy.
- Once the potatoes are done, remove them from the oven and serve hot, drizzled with the spicy tomato sauce and a dollop of vegan aioli.
- Garnish with fresh parsley before serving.
