Ingredients

  • Potatoes - 500 grams
  • Olive oil - 4 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Canned tomatoes - 200 grams
  • Chili flakes - 1/2 teaspoon
  • Vinegar (red wine or apple cider) - 1 tablespoon
  • Fresh parsley - for garnish
  • Silken tofu - 100 grams
  • Lemon juice - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Garlic (minced) - 1 clove

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash and peel the potatoes, then cut them into bite-sized cubes.
  3. In a large bowl, toss the potato cubes with 2 tablespoons of olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated.
  4. Spread the potatoes on a baking sheet and bake for 25-30 minutes, or until golden and crispy, flipping halfway through.
  5. While the potatoes are baking, prepare the sauce by heating the remaining olive oil in a saucepan over medium heat.
  6. Add the minced garlic and sauté for 1 minute until fragrant.
  7. Stir in the canned tomatoes, chili flakes, vinegar, and a pinch of salt. Simmer for about 10 minutes until slightly thickened.
  8. For the vegan aioli, blend the silken tofu, lemon juice, nutritional yeast, and a pinch of salt in a food processor until smooth and creamy.
  9. Once the potatoes are done, remove them from the oven and serve hot, drizzled with the spicy tomato sauce and a dollop of vegan aioli.
  10. Garnish with fresh parsley before serving.
