Ingredients

  • Potatoes - 500 grams
  • Garlic - 4 cloves, minced
  • Tomato sauce - 200 ml
  • Vegetable broth - 200 ml
  • Olive oil - 4 tablespoons
  • Chickpea flour - 4 tablespoons
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Peel and slice the potatoes into thick rounds, about 1 cm each.
  2. In a bowl, mix chickpea flour with a pinch of salt and pepper.
  3. Heat 2 tablespoons of olive oil in a large frying pan over medium heat.
  4. Coat each potato slice in the chickpea flour mixture, then fry in the pan until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
  5. In the same pan, add the remaining olive oil and minced garlic, sautéing until fragrant, about 1 minute.
  6. Stir in the tomato sauce, vegetable broth, and paprika, simmering for about 5 minutes.
  7. Return the fried potato slices to the pan, ensuring they are well coated with the sauce. Cook for an additional 5-10 minutes, allowing the potatoes to absorb the flavors.
  8. Serve hot, garnished with fresh parsley.
