Ingredients
- Potatoes - 500 grams
- Garlic - 4 cloves, minced
- Tomato sauce - 200 ml
- Vegetable broth - 200 ml
- Olive oil - 4 tablespoons
- Chickpea flour - 4 tablespoons
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Peel and slice the potatoes into thick rounds, about 1 cm each.
- In a bowl, mix chickpea flour with a pinch of salt and pepper.
- Heat 2 tablespoons of olive oil in a large frying pan over medium heat.
- Coat each potato slice in the chickpea flour mixture, then fry in the pan until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
- In the same pan, add the remaining olive oil and minced garlic, sautéing until fragrant, about 1 minute.
- Stir in the tomato sauce, vegetable broth, and paprika, simmering for about 5 minutes.
- Return the fried potato slices to the pan, ensuring they are well coated with the sauce. Cook for an additional 5-10 minutes, allowing the potatoes to absorb the flavors.
