Ingredients

  • Firm tofu - 200 grams
  • Zucchini - 1 medium (about 200 grams)
  • Red bell pepper - 1 medium (about 150 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • Water - 1/4 liter

Steps

  1. Press the tofu for 15 minutes to remove excess water, then cut it into small cubes.
  2. While the tofu is pressing, spiralize the zucchini to create 'zoodles' and slice the red bell pepper into thin strips.
  3. Heat olive oil in a large pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the tofu cubes to the pan and cook for about 5-7 minutes, stirring occasionally, until golden brown.
  5. Stir in the red bell pepper and cook for another 3-4 minutes until slightly softened.
  6. Add the zucchini noodles to the pan along with paprika, salt, and black pepper. Toss everything together and cook for an additional 3-4 minutes until the zoodles are just tender.
  7. Pour in the water and allow the mixture to simmer for 2 minutes to meld the flavors.
  8. Remove from heat, garnish with chopped fresh parsley, and serve warm.
