Ingredients
- Firm tofu - 200 grams
- Zucchini - 1 medium (about 200 grams)
- Red bell pepper - 1 medium (about 150 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
- Water - 1/4 liter
Steps
- Press the tofu for 15 minutes to remove excess water, then cut it into small cubes.
- While the tofu is pressing, spiralize the zucchini to create 'zoodles' and slice the red bell pepper into thin strips.
- Heat olive oil in a large pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the tofu cubes to the pan and cook for about 5-7 minutes, stirring occasionally, until golden brown.
- Stir in the red bell pepper and cook for another 3-4 minutes until slightly softened.
- Add the zucchini noodles to the pan along with paprika, salt, and black pepper. Toss everything together and cook for an additional 3-4 minutes until the zoodles are just tender.
- Pour in the water and allow the mixture to simmer for 2 minutes to meld the flavors.
- Remove from heat, garnish with chopped fresh parsley, and serve warm.
