Ingredients

  • Almond flour - 100 grams
  • Coconut oil - 30 grams, melted
  • Honey - 20 grams
  • Egg - 1 large
  • Cocoa powder - 15 grams
  • Medjool dates - 50 grams, pitted
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Chopped nuts (walnuts or pecans) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine almond flour, melted coconut oil, honey, and salt until a dough forms.
  3. Add the egg and mix well until fully incorporated.
  4. In a separate bowl, blend the pitted Medjool dates, cocoa powder, vanilla extract, and chopped nuts until a smooth filling is achieved.
  5. Roll the almond flour dough into small balls and flatten them into circles about 5 cm in diameter.
  6. Place a teaspoon of the chocolate-date filling in the center of each circle and fold the edges over to seal, forming a half-moon shape.
  7. Place the filled pastries on the prepared baking tray and bake for 15-20 minutes or until lightly golden.
  8. Remove from the oven and let cool slightly before serving.
