- Almond flour - 100 grams
- Coconut oil - 30 grams, melted
- Honey - 20 grams
- Egg - 1 large
- Cocoa powder - 15 grams
- Medjool dates - 50 grams, pitted
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Chopped nuts (walnuts or pecans) - 30 grams
Steps
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a mixing bowl, combine almond flour, melted coconut oil, honey, and salt until a dough forms.
- Add the egg and mix well until fully incorporated.
- In a separate bowl, blend the pitted Medjool dates, cocoa powder, vanilla extract, and chopped nuts until a smooth filling is achieved.
- Roll the almond flour dough into small balls and flatten them into circles about 5 cm in diameter.
- Place a teaspoon of the chocolate-date filling in the center of each circle and fold the edges over to seal, forming a half-moon shape.
- Place the filled pastries on the prepared baking tray and bake for 15-20 minutes or until lightly golden.
- Remove from the oven and let cool slightly before serving.
