  • Soybean pasta - 200 grams

  • Chorizo - 100 grams, diced
  • Bell pepper - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. Bring a pot of salted water to a boil. Add the soybean pasta and cook according to package instructions, usually about 5-7 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced chorizo to the skillet and cook for about 3-4 minutes until it starts to brown.
  4. Stir in the diced bell pepper and cook for an additional 2-3 minutes until softened.
  5. Add the fresh spinach to the skillet, cooking until wilted, about 2 minutes.
  6. Combine the cooked soybean pasta with the chorizo and vegetable mixture. Stir well to combine.
  7. Season with salt, black pepper, and paprika to taste. Cook for an additional 2 minutes to heat through.
