Ingredients

  • Zucchini - 2 medium (about 400g)
  • Red bell peppers - 2 large (about 300g)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 10g, chopped
  • Parmesan cheese - 30g, grated (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red bell peppers in half, remove the seeds, and place them cut side down on a baking sheet lined with parchment paper.
  3. Roast the peppers in the oven for about 20 minutes or until the skins are blistered and charred.
  4. While the peppers are roasting, spiralize the zucchini to create zoodles and set aside.
  5. In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  6. Once the peppers are roasted, remove them from the oven, let them cool slightly, then peel off the skins and chop them into pieces.
  7. Add the chopped peppers to the skillet with garlic, along with red wine vinegar, paprika, salt, and black pepper. Cook for about 5 minutes, stirring occasionally.
  8. Using an immersion blender or a regular blender, puree the pepper mixture until smooth.
  9. In another pan, lightly sauté the zoodles in a little olive oil for about 2-3 minutes until just tender.
  10. Serve the zoodles topped with the roasted red pepper sauce and garnish with fresh basil and grated Parmesan cheese if desired.
