- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Cherry tomatoes - 100 grams, halved
Steps
- Preheat your oven to 180°C (350°F).
- In a food processor, blend the walnuts until they reach a fine flour consistency.
- In a large mixing bowl, combine the walnut flour, eggs, olive oil, minced garlic, grated Parmesan, salt, black pepper, and red pepper flakes. Mix until well combined.
- Spread the mixture evenly onto a baking sheet lined with parchment paper, forming a thin layer.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove the walnut pasta from the oven and let it cool for a few minutes.
- Cut the baked walnut layer into strips resembling pasta.
- In a skillet, heat a little olive oil over medium heat and add the halved cherry tomatoes. Sauté for 3-4 minutes until they soften.
- Add the walnut pasta strips to the skillet and gently toss with the tomatoes and chopped parsley. Cook for an additional 2-3 minutes until heated through.
- Serve immediately, garnished with extra Parmesan and parsley if desired.
