  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a food processor, blend the walnuts until they reach a fine flour consistency.
  3. In a large mixing bowl, combine the walnut flour, eggs, olive oil, minced garlic, grated Parmesan, salt, black pepper, and red pepper flakes. Mix until well combined.
  4. Spread the mixture evenly onto a baking sheet lined with parchment paper, forming a thin layer.
  5. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  6. Remove the walnut pasta from the oven and let it cool for a few minutes.
  7. Cut the baked walnut layer into strips resembling pasta.
  8. In a skillet, heat a little olive oil over medium heat and add the halved cherry tomatoes. Sauté for 3-4 minutes until they soften.
  9. Add the walnut pasta strips to the skillet and gently toss with the tomatoes and chopped parsley. Cook for an additional 2-3 minutes until heated through.
  10. Serve immediately, garnished with extra Parmesan and parsley if desired.
