- Black pepper - 1/4 teaspoon
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
Steps
- In a mixing bowl, combine lentil flour, salt, black pepper, and olive oil. Mix well.
- Add the egg and water to the flour mixture and knead until a smooth dough forms. If the dough is too dry, add a bit more water.
- Wrap the dough in plastic wrap and let it rest for 10 minutes.
- While the dough is resting, heat a non-stick skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the cherry tomatoes to the skillet and cook for 5 minutes until they start to soften.
- Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted. Season with salt and pepper to taste.
- Roll out the lentil dough on a floured surface to your desired thickness, then cut it into your preferred pasta shape.
- In a large pot of boiling salted water, cook the lentil pasta for 3-4 minutes until al dente. Drain the pasta.
- Combine the cooked pasta with the sautéed vegetables and toss gently to mix.
