  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated

Steps

  1. In a mixing bowl, combine lentil flour, salt, black pepper, and olive oil. Mix well.
  2. Add the egg and water to the flour mixture and knead until a smooth dough forms. If the dough is too dry, add a bit more water.
  3. Wrap the dough in plastic wrap and let it rest for 10 minutes.
  4. While the dough is resting, heat a non-stick skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add the cherry tomatoes to the skillet and cook for 5 minutes until they start to soften.
  6. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted. Season with salt and pepper to taste.
  7. Roll out the lentil dough on a floured surface to your desired thickness, then cut it into your preferred pasta shape.
  8. In a large pot of boiling salted water, cook the lentil pasta for 3-4 minutes until al dente. Drain the pasta.
  9. Combine the cooked pasta with the sautéed vegetables and toss gently to mix.
