- chickpea flour - 120 grams
- water - 150 milliliters
- olive oil - 2 tablespoons
- garlic - 2 cloves, minced
- bell pepper - 1 medium, diced
- zucchini - 1 small, diced
- spinach - 50 grams, fresh
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- paprika - 1/2 teaspoon
- parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a mixing bowl, combine chickpea flour and water to create a smooth batter. Let it rest for 10 minutes.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Pour the chickpea batter into the skillet, spreading it evenly. Cook for 5-7 minutes until the edges lift and the bottom is golden brown.
- Flip the chickpea pancake carefully and cook for another 5-7 minutes on the other side. Remove from skillet and let cool slightly.
- In the same skillet, add the remaining tablespoon of olive oil, bell pepper, and zucchini. Sauté for 3-4 minutes until softened.
- Add spinach, salt, black pepper, and paprika to the skillet. Cook for another 2 minutes until the spinach wilts.
- Cut the chickpea pancake into strips and add to the skillet, tossing gently to combine with the vegetables.
- Serve hot, garnished with chopped parsley.
