Ingredients

  • chickpea flour - 120 grams
  • water - 150 milliliters
  • olive oil - 2 tablespoons
  • garlic - 2 cloves, minced
  • bell pepper - 1 medium, diced
  • zucchini - 1 small, diced
  • spinach - 50 grams, fresh
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • paprika - 1/2 teaspoon
  • parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a mixing bowl, combine chickpea flour and water to create a smooth batter. Let it rest for 10 minutes.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Pour the chickpea batter into the skillet, spreading it evenly. Cook for 5-7 minutes until the edges lift and the bottom is golden brown.
  4. Flip the chickpea pancake carefully and cook for another 5-7 minutes on the other side. Remove from skillet and let cool slightly.
  5. In the same skillet, add the remaining tablespoon of olive oil, bell pepper, and zucchini. Sauté for 3-4 minutes until softened.
  6. Add spinach, salt, black pepper, and paprika to the skillet. Cook for another 2 minutes until the spinach wilts.
  7. Cut the chickpea pancake into strips and add to the skillet, tossing gently to combine with the vegetables.
  8. Serve hot, garnished with chopped parsley.
