  • Heavy cream - 100 ml
  • Parmesan cheese - 50 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Nutmeg - a pinch

Steps

  1. In a large pot, bring salted water to a boil. Add the fresh spinach and blanch for 2-3 minutes until wilted. Drain and rinse with cold water to stop the cooking process.
  2. Once cooled, squeeze out excess water from the spinach and finely chop it.
  3. In a bowl, combine almond flour, eggs, salt, and pepper. Mix until a dough forms. Fold in the chopped spinach until evenly distributed.
  4. On a clean surface, roll out the dough to about 0.5 cm thick. Cut into desired pasta shapes (e.g., tagliatelle or fettuccine).
  5. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  6. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, salt, pepper, and nutmeg. Cook until the sauce thickens slightly, about 3-4 minutes.
  7. In the same pot of boiling water, cook the fresh pasta for 3-4 minutes or until floating. Drain and add to the skillet with the sauce.
  8. Toss the pasta gently in the sauce until well coated. Serve hot, garnished with extra Parmesan if desired.
