- Heavy cream - 100 ml
- Parmesan cheese - 50 grams, grated

- Nutmeg - a pinch
Steps
- In a large pot, bring salted water to a boil. Add the fresh spinach and blanch for 2-3 minutes until wilted. Drain and rinse with cold water to stop the cooking process.
- Once cooled, squeeze out excess water from the spinach and finely chop it.
- In a bowl, combine almond flour, eggs, salt, and pepper. Mix until a dough forms. Fold in the chopped spinach until evenly distributed.
- On a clean surface, roll out the dough to about 0.5 cm thick. Cut into desired pasta shapes (e.g., tagliatelle or fettuccine).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, salt, pepper, and nutmeg. Cook until the sauce thickens slightly, about 3-4 minutes.
- In the same pot of boiling water, cook the fresh pasta for 3-4 minutes or until floating. Drain and add to the skillet with the sauce.
- Toss the pasta gently in the sauce until well coated. Serve hot, garnished with extra Parmesan if desired.
