- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
Steps
- Begin by cutting the cauliflower into florets and steaming them until tender, about 10 minutes.
- Once steamed, transfer the cauliflower to a food processor and pulse until it resembles rice or pasta. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced chorizo to the skillet and cook until browned, about 5 minutes.

- Season with salt, black pepper, and red pepper flakes if using. Stir to combine.
