  • Chorizo sausage - 100 grams, diced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Begin by cutting the cauliflower into florets and steaming them until tender, about 10 minutes.
  2. Once steamed, transfer the cauliflower to a food processor and pulse until it resembles rice or pasta. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the diced chorizo to the skillet and cook until browned, about 5 minutes.
  5. Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they soften.
  6. Add the processed cauliflower to the skillet, mixing well with the chorizo and tomatoes. Cook for an additional 5 minutes, allowing the flavors to meld.
  7. Fold in the fresh spinach, cooking until wilted, about 2 minutes.
  8. Season with salt, black pepper, and red pepper flakes if using. Stir to combine.
  9. Serve hot, topped with grated Parmesan cheese.
