Ingredients

  • Coconut flour - 100 grams
  • Eggs - 2 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated

Steps

  1. In a mixing bowl, combine coconut flour, eggs, olive oil, salt, garlic powder, and black pepper. Mix until a dough forms.
  2. Knead the dough for a couple of minutes until smooth, then wrap in plastic wrap and let it rest for 10 minutes.
  3. Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness. Cut into your desired pasta shapes.
  4. Bring a pot of salted water to a boil and cook the pasta for about 3-4 minutes or until al dente. Drain and set aside.
  5. In a skillet over medium heat, add a splash of olive oil. Sauté the spinach and cherry tomatoes for 3-4 minutes until the spinach wilts.
  6. Add the cooked pasta to the skillet and toss everything together. Cook for an additional 2 minutes.
  7. Remove from heat, sprinkle with fresh parsley and grated Parmesan cheese before serving.
