- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Cherry tomatoes - 100 grams, halved
- Spinach - 100 grams, fresh
- Parmesan cheese - 30 grams, grated
Steps
- In a mixing bowl, combine coconut flour, eggs, olive oil, salt, garlic powder, and black pepper. Mix until a dough forms.
- Knead the dough for a couple of minutes until smooth, then wrap in plastic wrap and let it rest for 10 minutes.
- Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness. Cut into your desired pasta shapes.
- Bring a pot of salted water to a boil and cook the pasta for about 3-4 minutes or until al dente. Drain and set aside.
- In a skillet over medium heat, add a splash of olive oil. Sauté the spinach and cherry tomatoes for 3-4 minutes until the spinach wilts.
- Add the cooked pasta to the skillet and toss everything together. Cook for an additional 2 minutes.
