Ingredients
- almond flour - 150 grams
- eggs - 2 large
- olive oil - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- garlic - 2 cloves, minced
- canned diced tomatoes - 400 grams
- fresh basil - 10 grams, chopped
- Parmesan cheese - 30 grams, grated
- water - 1 liter
Steps
- In a mixing bowl, combine almond flour, eggs, olive oil, salt, and black pepper. Mix until a dough forms.
- Knead the dough lightly on a clean surface for about 2 minutes until smooth. Let it rest for 10 minutes.
- Roll the dough out to about 1/4 inch thickness and cut into your desired pasta shape (sheets, fettuccine, etc.).
- Bring 1 liter of salted water to a boil in a large pot. Cook the almond pasta for 2-3 minutes or until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant, about 1 minute.
- Add the canned diced tomatoes and bring to a simmer. Season with salt and pepper to taste. Cook for 5-7 minutes until slightly thickened.
- Add the cooked pasta to the tomato sauce and toss to combine.
- Serve hot, garnished with fresh basil and grated Parmesan cheese.
