  • Mixed mushrooms (shiitake, cremini, or button) - 200 grams, sliced
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1 medium, finely chopped
  • Vegetable broth - 150 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, for serving) - 20 grams, grated

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the shallot and sauté until translucent, about 2-3 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-7 minutes, or until the mushrooms are tender and have released their moisture.
  4. Pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 3-4 minutes.
  5. Add the cooked pasta to the skillet and toss to combine. If the mixture seems dry, add a bit of the reserved pasta water.
  6. Season with salt and black pepper to taste. Stir in the chopped parsley just before serving.
  7. Serve hot, topped with grated Parmesan cheese if desired.
