- Mixed mushrooms (shiitake, cremini, or button) - 200 grams, sliced
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1 medium, finely chopped
- Vegetable broth - 150 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, for serving) - 20 grams, grated
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the shallot and sauté until translucent, about 2-3 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-7 minutes, or until the mushrooms are tender and have released their moisture.
- Pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 3-4 minutes.
- Add the cooked pasta to the skillet and toss to combine. If the mixture seems dry, add a bit of the reserved pasta water.
- Season with salt and black pepper to taste. Stir in the chopped parsley just before serving.
- Serve hot, topped with grated Parmesan cheese if desired.
