- Pasta (spaghetti or linguine) - 200 grams
- Fresh parsley - 50 grams
- Fresh basil - 30 grams
- Garlic - 2 cloves
- Pine nuts - 30 grams
- Olive oil - 60 ml
- Lemon juice - 15 ml
- Parmesan cheese (grated) - 30 grams
- Salt - 1 teaspoon
- Black pepper - to taste
- Cherry tomatoes - 150 grams
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, prepare the salsa verde by combining parsley, basil, garlic, pine nuts, olive oil, lemon juice, and a pinch of salt in a food processor. Blend until smooth and adjust seasoning to taste.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and return it to the pot.
- Add the salsa verde to the pasta along with a little reserved pasta water to help loosen the sauce. Toss well to combine.
- Halve the cherry tomatoes and add them to the pasta, tossing gently to combine.
- Serve the pasta in bowls, topped with grated Parmesan cheese and a sprinkle of black pepper.
