Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Fresh parsley - 50 grams
  • Fresh basil - 30 grams
  • Garlic - 2 cloves
  • Pine nuts - 30 grams
  • Olive oil - 60 ml
  • Lemon juice - 15 ml
  • Parmesan cheese (grated) - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Cherry tomatoes - 150 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, prepare the salsa verde by combining parsley, basil, garlic, pine nuts, olive oil, lemon juice, and a pinch of salt in a food processor. Blend until smooth and adjust seasoning to taste.
  3. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and return it to the pot.
  4. Add the salsa verde to the pasta along with a little reserved pasta water to help loosen the sauce. Toss well to combine.
  5. Halve the cherry tomatoes and add them to the pasta, tossing gently to combine.
  6. Serve the pasta in bowls, topped with grated Parmesan cheese and a sprinkle of black pepper.
