- Blue cheese - 100 grams, crumbled
- Heavy cream - 150 ml
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Reduce the heat to low and add the heavy cream to the skillet, stirring well to combine.
- Add the crumbled blue cheese to the skillet and stir until it melts and creates a creamy sauce. Season with salt, black pepper, and red chili flakes (if using).
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the blue cheese sauce, tossing to coat evenly. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.
- Remove from heat, stir in the chopped parsley, and serve immediately.
