Ingredients

  • Whole wheat pasta - 150 grams
  • Red bell peppers - 2 large (about 300 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cooked chickpeas - 100 grams
  • Vegetable broth - 150 ml
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the red bell peppers on a baking sheet and roast in the oven for 20 minutes, until the skins are charred and blistered.
  3. While the peppers are roasting, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  4. Once the peppers are roasted, remove them from the oven, place them in a bowl, and cover with plastic wrap for 5 minutes to steam. This will make peeling easier.
  5. Peel the skins off the roasted peppers, remove the seeds, and chop them into smaller pieces.
  6. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  7. Add the chopped roasted peppers, cooked chickpeas, vegetable broth, smoked paprika, salt, and black pepper to the skillet. Stir to combine.
  8. Simmer the sauce for 5-7 minutes, allowing the flavors to meld, then use an immersion blender to puree the sauce until smooth.
  9. Combine the cooked pasta with the red pepper sauce in the skillet, tossing to coat the pasta evenly.
  10. Serve hot, garnished with fresh parsley.
