- Garlic - 2 cloves, minced
- Cooked chickpeas - 100 grams
- Vegetable broth - 150 ml
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Place the red bell peppers on a baking sheet and roast in the oven for 20 minutes, until the skins are charred and blistered.
- While the peppers are roasting, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- Once the peppers are roasted, remove them from the oven, place them in a bowl, and cover with plastic wrap for 5 minutes to steam. This will make peeling easier.
- Peel the skins off the roasted peppers, remove the seeds, and chop them into smaller pieces.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chopped roasted peppers, cooked chickpeas, vegetable broth, smoked paprika, salt, and black pepper to the skillet. Stir to combine.
- Simmer the sauce for 5-7 minutes, allowing the flavors to meld, then use an immersion blender to puree the sauce until smooth.
- Combine the cooked pasta with the red pepper sauce in the skillet, tossing to coat the pasta evenly.
- Serve hot, garnished with fresh parsley.
