Ingredients

  • Pasta (spaghetti or fettuccine) - 150g
  • Red bell pepper - 1 large
  • Yellow bell pepper - 1 large
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Onion - 1 small
  • Vegetable broth - 100ml
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
  3. Roast the bell peppers in the oven for about 20 minutes or until the skins are blistered and charred.
  4. While the peppers are roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  5. In a pan, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  6. Once the peppers are done, remove them from the oven and let them cool for a few minutes. Peel off the charred skins, then chop the flesh.
  7. Add the chopped peppers, vegetable broth, paprika, salt, and black pepper to the pan with the onion and garlic. Cook for another 5 minutes, allowing the flavors to meld.
  8. Blend the sauce using an immersion blender or a regular blender until smooth. If it's too thick, you can add a bit more vegetable broth.
  9. Combine the cooked pasta with the sauce, ensuring the pasta is well coated.
  10. Serve hot, garnished with fresh basil.
