Ingredients

  • Pasta (spaghetti or penne) - 150 grams
  • Sun-dried tomatoes - 100 grams
  • Fresh basil leaves - 30 grams
  • Garlic - 2 cloves
  • Pine nuts - 30 grams
  • Parmesan cheese (grated) - 30 grams
  • Olive oil - 60 ml
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a food processor, combine sun-dried tomatoes, fresh basil, garlic, pine nuts, and Parmesan cheese. Pulse until coarsely blended.
  3. With the food processor running, slowly add olive oil until the mixture reaches a smooth consistency. If it's too thick, add a little reserved pasta water to loosen it.
  4. Season the pesto with salt, black pepper, and red pepper flakes to taste.
  5. In a large bowl, combine the cooked pasta with the pesto sauce, tossing until the pasta is well-coated.
  6. Serve immediately, garnished with extra Parmesan cheese and fresh basil leaves if desired.
