- Zucchini - 2 medium, spiralized
- Chicken breast - 300 grams, diced
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Onion - 1 small, diced
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 10 leaves, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced chicken breast to the skillet and season with salt, black pepper, and paprika. Cook until browned and cooked through, about 7-10 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
- Add the diced red bell pepper and halved cherry tomatoes to the skillet. Cook for another 5 minutes until the vegetables are tender.
- Return the cooked chicken to the skillet and stir to combine with the vegetables.
- Add the spiralized zucchini to the skillet and toss everything together. Cook for an additional 3-4 minutes until the zucchini is slightly softened.
- Remove from heat, stir in the chopped basil and lemon juice, and serve immediately.
