Ingredients

  • Zucchini - 2 medium, spiralized
  • Chicken breast - 300 grams, diced
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Onion - 1 small, diced
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 10 leaves, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast to the skillet and season with salt, black pepper, and paprika. Cook until browned and cooked through, about 7-10 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
  5. Add the diced red bell pepper and halved cherry tomatoes to the skillet. Cook for another 5 minutes until the vegetables are tender.
  6. Return the cooked chicken to the skillet and stir to combine with the vegetables.
  7. Add the spiralized zucchini to the skillet and toss everything together. Cook for an additional 3-4 minutes until the zucchini is slightly softened.
  8. Remove from heat, stir in the chopped basil and lemon juice, and serve immediately.
