  • Padrón peppers - 150 grams
  • Extra virgin olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 leaves, torn
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the Padrón peppers to the skillet and sauté for about 5-7 minutes until they are blistered and tender.
  4. Add the minced garlic and sauté for another minute until fragrant, being careful not to burn it.
  5. Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften.
  6. Once the pasta is cooked, reserve 1/4 cup of the pasta water, then drain the pasta and add it to the skillet with the peppers and tomatoes.
  7. Add the reserved pasta water and remaining olive oil to the skillet, tossing everything together until well combined.
  8. Season with salt and black pepper to taste, and toss in the torn basil leaves.
  9. Serve warm, garnished with grated Parmesan cheese if desired.
