- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 leaves, torn
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
- While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the Padrón peppers to the skillet and sauté for about 5-7 minutes until they are blistered and tender.
- Add the minced garlic and sauté for another minute until fragrant, being careful not to burn it.
- Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften.
- Once the pasta is cooked, reserve 1/4 cup of the pasta water, then drain the pasta and add it to the skillet with the peppers and tomatoes.
- Add the reserved pasta water and remaining olive oil to the skillet, tossing everything together until well combined.
- Season with salt and black pepper to taste, and toss in the torn basil leaves.
- Serve warm, garnished with grated Parmesan cheese if desired.
