Ingredients

  • Red bell pepper - 1 medium (about 150 grams)
  • Yellow bell pepper - 1 medium (about 150 grams)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the red and yellow bell peppers in half, remove the seeds, and place them cut side down on a baking sheet.
  3. Roast the peppers in the preheated oven for about 20 minutes, or until the skins are blistered and charred.
  4. While the peppers are roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  5. Once the peppers are done, remove them from the oven and let them cool slightly. Peel off the skins and chop the flesh into strips.
  6. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  7. Add the roasted pepper strips to the skillet and cook for an additional 2-3 minutes, stirring gently.
  8. Drain the pasta and add it to the skillet with the peppers. Toss everything together, and season with salt and black pepper to taste.
  9. Remove from heat, stir in the fresh basil, and serve with grated Parmesan cheese on top if desired.
