  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the sliced red and yellow bell peppers to the skillet, season with salt and black pepper, and cook for about 5-7 minutes until they are tender and slightly caramelized.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the peppers.
  6. Mix everything together, adding a bit of reserved pasta water if the mixture seems dry. Cook for an additional 2 minutes to combine the flavors.
  7. Remove from heat, stir in the chopped parsley, and serve topped with grated Parmesan cheese if desired.
