- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons (chopped)

Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving about 1 cup of the pasta cooking water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for another 2-3 minutes until the pepper softens.

- Allow the chickpea mixture to simmer for about 5-7 minutes, letting the flavors meld together.
- Add the cooked pasta to the skillet, tossing to combine. If the mixture seems dry, add some reserved pasta cooking water to reach your desired consistency.
- Remove from heat and stir in the chopped parsley before serving.
