  • Garlic - 3 cloves (minced)
  • Onion - 1 small (finely chopped)
  • Red bell pepper - 1 (diced)
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons (chopped)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving about 1 cup of the pasta cooking water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and diced red bell pepper to the skillet, cooking for another 2-3 minutes until the pepper softens.
  4. Stir in the smoked paprika and cumin, cooking for 1 minute until fragrant.
  5. Add the drained chickpeas and vegetable broth into the skillet, bringing the mixture to a simmer. Season with salt and black pepper to taste.
  6. Allow the chickpea mixture to simmer for about 5-7 minutes, letting the flavors meld together.
  7. Add the cooked pasta to the skillet, tossing to combine. If the mixture seems dry, add some reserved pasta cooking water to reach your desired consistency.
  8. Remove from heat and stir in the chopped parsley before serving.
