Ingredients

  • Pasta (whole wheat or your choice) - 150 grams
  • Fresh spinach - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and red pepper flakes if using.
  4. Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Add the drained pasta to the skillet with the spinach.
  5. Stir in the ricotta cheese and mix well, adding reserved pasta water as needed to create a creamy consistency.
  6. Finish with grated Parmesan cheese and a squeeze of lemon juice, mixing everything until well combined.
  7. Serve immediately, garnished with additional Parmesan cheese if desired.
