- Garlic - 2 cloves, minced
- Red pepper flakes - 1/4 teaspoon

- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
- Lemon juice - 1 tablespoon
- Pine nuts - 20 grams, toasted
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the minced garlic and red pepper flakes to the skillet, cooking for about 1 minute until fragrant, but not browned.
- Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the spinach, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt, black pepper, and lemon juice, mixing well.
- Serve hot, topped with toasted pine nuts and grated Parmesan cheese if desired.
