Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Fresh spinach - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated
  • Lemon juice - 1 tablespoon
  • Pine nuts - 20 grams, toasted

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet, cooking for about 1 minute until fragrant, but not browned.
  4. Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest.
  6. Add the drained pasta to the skillet with the spinach, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  7. Season with salt, black pepper, and lemon juice, mixing well.
  8. Serve hot, topped with toasted pine nuts and grated Parmesan cheese if desired.
