- Pasta (spaghetti or linguine) - 150 grams
- Zucchini - 1 medium (about 200 grams), sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet and cook for about 5-7 minutes until tender, stirring occasionally.
- If using, add the red pepper flakes and season with salt and black pepper to taste.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the cooked pasta to the skillet with the zucchini, tossing everything together. If the mixture seems dry, add some reserved pasta water until the desired consistency is reached.
- Stir in the chopped parsley and mix well.
- Serve warm, optionally topped with grated Parmesan cheese.
