Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Zucchini - 1 medium (about 200 grams), sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the sliced zucchini to the skillet and cook for about 5-7 minutes until tender, stirring occasionally.
  5. If using, add the red pepper flakes and season with salt and black pepper to taste.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
  7. Add the cooked pasta to the skillet with the zucchini, tossing everything together. If the mixture seems dry, add some reserved pasta water until the desired consistency is reached.
  8. Stir in the chopped parsley and mix well.
  9. Serve warm, optionally topped with grated Parmesan cheese.
