  • Spaghetti - 150 grams
  • Fresh clams - 250 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter

Steps

  1. In a large pot, bring 1 liter of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the fresh clams to the skillet and pour in the lemon juice. Cover the skillet and cook for about 5-7 minutes until the clams open up. Discard any that do not open.
  4. Stir in the cooked spaghetti and chopped parsley, mixing everything well. If the pasta seems dry, add a little reserved pasta water until you reach your desired consistency.
  5. Season with salt and black pepper to taste. Serve immediately, garnished with additional parsley if desired.
