- Spaghetti - 150 grams
- Fresh clams - 250 grams
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
Steps
- In a large pot, bring 1 liter of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the fresh clams to the skillet and pour in the lemon juice. Cover the skillet and cook for about 5-7 minutes until the clams open up. Discard any that do not open.
- Stir in the cooked spaghetti and chopped parsley, mixing everything well. If the pasta seems dry, add a little reserved pasta water until you reach your desired consistency.
- Season with salt and black pepper to taste. Serve immediately, garnished with additional parsley if desired.
