Ingredients

  • Spaghetti - 200 grams
  • Extra virgin olive oil - 60 ml
  • Garlic - 4 cloves, thinly sliced
  • Red pepper flakes - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic to the skillet and sauté until golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  4. Stir in the red pepper flakes and cook for an additional 30 seconds.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the garlic oil.
  6. Toss the pasta to coat in the garlic oil, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
  7. Season with salt and black pepper to taste, and stir in the chopped parsley before serving.
