- Whole wheat spaghetti - 160 grams
- Extra virgin olive oil - 4 tablespoons
- Garlic cloves - 4, minced
- Red pepper flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon zest - 1 teaspoon
- Parmesan cheese (optional) - 20 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package instructions until al dente.
- While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the red pepper flakes and cook for an additional minute.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained pasta to the skillet and toss it with the garlic oil mixture.
- If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Stir in the chopped parsley, lemon zest, and season with salt and black pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
