Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes.
- Add the minced garlic to the skillet with the pancetta and sauté for another minute until fragrant.
- In a bowl, whisk together the eggs, grated Parmesan cheese, and freshly ground black pepper until well combined.
- Once the pasta is cooked, reserve 1 cup of the pasta cooking water, then drain the spaghetti.
- Quickly add the hot spaghetti to the skillet with the pancetta and garlic. Remove from heat and pour the egg and cheese mixture over the pasta, tossing quickly to combine. The heat from the pasta will cook the eggs and create a creamy sauce.
- If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
