  • Red pepper flakes - 1/4 teaspoon

Steps

  1. Wash the new potatoes thoroughly and place them in a pot.
  2. Add water and 2 tablespoons of sea salt to the pot, ensuring the potatoes are covered.
  3. Bring the water to a boil over medium-high heat, then reduce to a simmer and cook for about 20 minutes or until the potatoes are tender.
  4. Once cooked, drain the potatoes and return them to the pot over low heat for about 5 minutes to help them wrinkle and dry out.
  5. In a small bowl, mix together olive oil, minced garlic, lemon juice, cumin, red pepper flakes, and chopped parsley to create a dressing.
