  • Potatoes - 400 grams

  • Feta cheese - 100 grams
  • Cream cheese - 50 grams
  • Aji amarillo paste - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste
  • Olives - 4, for garnish
  • Parsley - a few sprigs, for garnish

Steps

  1. Peel and cut the potatoes into halves or quarters, depending on their size.
  2. In a large pot, bring salted water to a boil and add the potatoes. Cook for about 20-25 minutes, or until fork-tender.
  3. While the potatoes are cooking, prepare the Huancaína sauce. In a blender, combine feta cheese, cream cheese, aji amarillo paste, lime juice, minced garlic, salt, and black pepper. Blend until smooth and creamy, adding a little water if necessary to achieve a pourable consistency.
  4. Once the potatoes are done, drain them and let them cool slightly.
  5. Serve the warm potatoes topped with the Huancaína sauce. Drizzle with a bit of vegetable oil if desired.
  6. Garnish with sliced olives and fresh parsley before serving.
