Ingredients

  • heavy cream - 200 ml
  • unsweetened almond milk - 100 ml
  • sugar-free vanilla extract - 1 tsp
  • gelatin powder - 1 tsp
  • water - 2 tbsp
  • lemon zest - 1 tsp
  • orange zest - 1 tsp
  • erythritol - 2 tbsp
  • sea salt - a pinch

Steps

  1. In a small bowl, combine the gelatin powder and water, allowing it to bloom for about 5 minutes.
  2. In a saucepan, heat the heavy cream, almond milk, erythritol, vanilla extract, lemon zest, orange zest, and sea salt over medium heat until just simmering, stirring occasionally.
  3. Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  4. Pour the mixture into two serving glasses or ramekins, then refrigerate for at least 4 hours or until set.
  5. Once set, serve chilled, optionally garnished with additional citrus zest or a few berries if desired.
