  • Greek yogurt - 200 grams
  • Heavy cream - 100 milliliters
  • Espresso or strong coffee - 50 milliliters
  • Gelatin powder - 5 grams
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Pinch of salt
  • Cocoa powder - for garnish

Steps

  1. In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the heavy cream, honey, and a pinch of salt. Heat over medium heat until the mixture is warm but not boiling.
  3. Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  4. Add the espresso and vanilla extract to the cream mixture, stirring well to combine.
  5. In a mixing bowl, whisk the Greek yogurt until smooth. Gradually incorporate the coffee-cream mixture into the yogurt until fully combined.
  6. Pour the mixture into two serving glasses or ramekins and refrigerate for at least 4 hours, or until set.
  7. Once set, dust with cocoa powder before serving.
