- Espresso or strong coffee - 50 milliliters
- Gelatin powder - 5 grams
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Pinch of salt
- Cocoa powder - for garnish
Steps
- In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it bloom for about 5 minutes.
- In a saucepan, combine the heavy cream, honey, and a pinch of salt. Heat over medium heat until the mixture is warm but not boiling.
- Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
- Add the espresso and vanilla extract to the cream mixture, stirring well to combine.
- In a mixing bowl, whisk the Greek yogurt until smooth. Gradually incorporate the coffee-cream mixture into the yogurt until fully combined.
- Pour the mixture into two serving glasses or ramekins and refrigerate for at least 4 hours, or until set.
