Ingredients

  • All-purpose flour - 250 grams
  • Almond milk - 150 milliliters
  • Coconut oil, melted - 30 grams
  • Brown sugar - 40 grams
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Vanilla extract - 1 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Powdered sugar (for dusting) - optional

Steps

  1. In a small bowl, combine the almond milk and coconut oil, then heat gently until warm but not hot. Stir in the active dry yeast and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together the all-purpose flour, brown sugar, salt, and ground cinnamon.
  3. Add the frothy yeast mixture and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 8-10 minutes, until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  6. Preheat the oven to 180°C (350°F).
  7. Once the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball and place them on a baking sheet lined with parchment paper.
  8. Cover the shaped rolls with the kitchen towel and let them rise again for about 15 minutes.
  9. Bake in the preheated oven for 15-20 minutes, or until golden brown.
  10. Remove from the oven and let cool slightly. Dust with powdered sugar if desired before serving.
