Panes de Higo are delightful Spanish fig cakes that are naturally sweet and packed with flavor. This dairy-free breakfast treat combines dried figs, nuts, and spices, making it a wholesome start to your day.

- Dried figs - 200 grams
- Almonds - 50 grams
- Walnuts - 50 grams
- Oats - 50 grams
- Honey or agave syrup - 2 tablespoons
- Cinnamon - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Water - 100 ml
Steps
- Preheat your oven to 180°C (350°F) and line a baking dish with parchment paper.
- In a bowl, soak the dried figs in warm water for about 10 minutes to soften them.
- Drain the figs and chop them finely. Set aside.
- In a food processor, combine the almonds, walnuts, and oats. Pulse until they form a coarse flour.
- Add the chopped figs, honey or agave syrup, cinnamon, vanilla extract, and salt to the processor. Blend until the mixture is well combined and sticky.
- Transfer the mixture to the prepared baking dish and press it down evenly with your hands.
- Bake in the preheated oven for 20 minutes, or until firm and slightly golden on the edges.
- Remove from the oven and let it cool completely in the dish before cutting into squares or bars.
- Serve at room temperature or slightly warmed.
