Ingredients

  • All-purpose flour - 250 grams
  • Unsalted butter - 125 grams, chilled and cubed
  • Granulated sugar - 30 grams
  • Salt - 5 grams
  • Cold water - 60 ml
  • Dark chocolate (70% cocoa) - 100 grams, chopped
  • Egg (for egg wash) - 1 large
  • Powdered sugar - for dusting (optional)

Steps

  1. In a bowl, mix the flour, granulated sugar, and salt together. Add the chilled butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
  2. Gradually add cold water to the mixture, stirring until the dough comes together. Form it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  4. On a floured surface, roll out the chilled dough into a rectangle, about 5 mm thick. Cut it into 4 equal squares.
  5. Place a tablespoon of chopped dark chocolate in the center of each square. Fold the corners of the squares over the chocolate to enclose it completely.
  6. Transfer the pastries to the prepared baking sheet. Beat the egg and brush it over the tops of the pastries for a golden finish.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown. Allow to cool slightly before dusting with powdered sugar if desired and serve warm.
