Ingredients
- All-purpose flour - 250 grams
- Unsalted butter - 125 grams, chilled and cubed
- Granulated sugar - 30 grams
- Salt - 5 grams
- Cold water - 60 ml
- Dark chocolate (70% cocoa) - 100 grams, chopped
- Egg (for egg wash) - 1 large
- Powdered sugar - for dusting (optional)
Steps
- In a bowl, mix the flour, granulated sugar, and salt together. Add the chilled butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
- Gradually add cold water to the mixture, stirring until the dough comes together. Form it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- On a floured surface, roll out the chilled dough into a rectangle, about 5 mm thick. Cut it into 4 equal squares.
- Place a tablespoon of chopped dark chocolate in the center of each square. Fold the corners of the squares over the chocolate to enclose it completely.
- Transfer the pastries to the prepared baking sheet. Beat the egg and brush it over the tops of the pastries for a golden finish.
- Bake in the preheated oven for 15-20 minutes or until golden brown. Allow to cool slightly before dusting with powdered sugar if desired and serve warm.
