- all-purpose flour - 100 grams
- plant-based milk (almond or oat) - 150 ml
- baking powder - 1 teaspoon
- ground cinnamon - 1/2 teaspoon
- vanilla extract - 1 teaspoon
- salt - a pinch
- coconut oil (for cooking) - 1 tablespoon
Steps
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the plant-based milk, vanilla extract, and a pinch of salt to the mashed bananas and mix well.
- In a separate bowl, combine the all-purpose flour, baking powder, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Heat a non-stick skillet over medium heat and add the coconut oil.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake.
- Cook for about 2-3 minutes on one side, or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
- Serve warm with maple syrup or fresh fruit.
