  • baking powder - 10 grams
  • salt - 1 gram
  • sugar - 30 grams
  • milk - 200 milliliters
  • orange juice - 50 milliliters
  • orange zest - 1 teaspoon
  • eggs - 1 large
  • vegetable oil - 30 milliliters
  • honey - for serving
  • cinnamon - for serving

Steps

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar.
  2. In another bowl, whisk together the milk, orange juice, orange zest, and egg until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and add a little vegetable oil.
  5. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake.
  6. Cook for about 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for an additional 1-2 minutes until golden brown.
  7. Remove from the skillet and keep warm while you repeat with the remaining batter.
  8. Serve the pancakes warm, drizzled with honey and a sprinkle of cinnamon.
