Ingredients

  • Crusty bread (such as rustic baguette or ciabatta) - 200 grams
  • Extra virgin olive oil - 4 tablespoons
  • Sea salt - to taste
  • Ripe tomato - 1 medium (optional)
  • Fresh basil leaves - a few (optional)

Steps

  1. Slice the crusty bread into 2 equal pieces, each about 1 inch thick.
  2. Toast the bread slices in a preheated oven at 200°C (392°F) for about 5 minutes or until golden and crispy.
  3. While the bread is toasting, if using, cut the ripe tomato in half and grate the flesh into a bowl, discarding the skin.
  4. Once the bread is toasted, remove it from the oven and immediately drizzle each slice with 2 tablespoons of extra virgin olive oil.
  5. If using, spread the grated tomato evenly over the olive oil-drizzled bread.
  6. Sprinkle sea salt to taste over each slice and add fresh basil leaves if desired.
