Ingredients

  • Bomba rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Zucchini - 1, diced
  • Artichoke hearts - 100 grams, quartered
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Smoked paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish
  • Lemon wedges - for serving

Steps

  1. In a large paella pan or skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened, about 2-3 minutes.
  3. Stir in the diced red and green bell peppers, cooking for another 5 minutes until they start to soften.
  4. Add the diced zucchini and artichoke hearts, and cook for an additional 3 minutes.
  5. Stir in the smoked paprika, saffron, salt, and pepper, mixing well to combine.
  6. Add the Bomba rice to the pan, stirring to coat the grains in the vegetable mixture for about 1 minute.
  7. Pour in the vegetable broth and bring to a gentle simmer.
  8. Arrange the halved cherry tomatoes on top and do not stir the rice from this point.
  9. Reduce the heat to low and let it cook uncovered for about 20 minutes, or until the rice has absorbed most of the liquid.
  10. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  11. Garnish with fresh parsley and serve with lemon wedges on the side.
