- Bomba rice - 150 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Zucchini - 1, diced
- Artichoke hearts - 100 grams, quartered
- Cherry tomatoes - 150 grams, halved
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Smoked paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
- Lemon wedges - for serving
Steps
- In a large paella pan or skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened, about 2-3 minutes.
- Stir in the diced red and green bell peppers, cooking for another 5 minutes until they start to soften.
- Add the diced zucchini and artichoke hearts, and cook for an additional 3 minutes.
- Stir in the smoked paprika, saffron, salt, and pepper, mixing well to combine.
- Add the Bomba rice to the pan, stirring to coat the grains in the vegetable mixture for about 1 minute.
- Pour in the vegetable broth and bring to a gentle simmer.
- Arrange the halved cherry tomatoes on top and do not stir the rice from this point.
- Reduce the heat to low and let it cook uncovered for about 20 minutes, or until the rice has absorbed most of the liquid.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
- Garnish with fresh parsley and serve with lemon wedges on the side.
