  • Tomato, diced - 1 medium (about 150 grams)
  • Seafood mix (shrimp, mussels, calamari) - 250 grams
  • Fish stock - 400 ml
  • Saffron threads - a pinch
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley, chopped - for garnish
  • Lemon wedges - for serving

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until the vegetables soften.
  3. Add the diced tomato and cook for another 3 minutes until it breaks down slightly.
  4. Stir in the saffron threads and paprika, mixing well to combine with the vegetables.
  5. Add the gluten-free pasta to the skillet, followed by the fish stock. Bring to a simmer, then reduce heat to low.
  6. Cook the pasta for about 8-10 minutes, stirring occasionally, until al dente and most of the liquid is absorbed.
  7. Add the seafood mix to the skillet, stirring gently to combine. Cook for an additional 5-7 minutes, or until the seafood is cooked through.
  8. Season with salt and black pepper to taste. Remove from heat and let it rest for 2 minutes.
  9. Serve hot, garnished with chopped parsley and lemon wedges on the side.
