Ingredients

  • Almond milk - 400 ml
  • Cornstarch - 30 g
  • Sugar - 50 g
  • Cinnamon stick - 1
  • Vanilla extract - 1 tsp
  • Lemon zest - 1 tsp
  • Salt - a pinch
  • Ground cinnamon - for garnish

Steps

  1. In a saucepan, combine the almond milk, sugar, cinnamon stick, and a pinch of salt. Heat over medium heat until it starts to steam but not boil.
  2. In a small bowl, mix the cornstarch with a few tablespoons of the warm almond milk until smooth. This will create a slurry.
  3. Remove the saucepan from the heat and stir in the cornstarch slurry, vanilla extract, and lemon zest. Return to medium heat.
  4. Continuously stir the mixture until it thickens, about 5-7 minutes.
  5. Once thickened, remove from heat and pour the mixture into serving bowls.
  6. Allow the natillas to cool at room temperature for a few minutes before refrigerating for at least 2 hours to set.
  7. Before serving, sprinkle with ground cinnamon for garnish.
