Ingredients
- Almond milk - 400 ml
- Cornstarch - 30 g
- Sugar - 50 g
- Cinnamon stick - 1
- Vanilla extract - 1 tsp
- Lemon zest - 1 tsp
- Salt - a pinch
- Ground cinnamon - for garnish
Steps
- In a saucepan, combine the almond milk, sugar, cinnamon stick, and a pinch of salt. Heat over medium heat until it starts to steam but not boil.
- In a small bowl, mix the cornstarch with a few tablespoons of the warm almond milk until smooth. This will create a slurry.
- Remove the saucepan from the heat and stir in the cornstarch slurry, vanilla extract, and lemon zest. Return to medium heat.
- Continuously stir the mixture until it thickens, about 5-7 minutes.
- Once thickened, remove from heat and pour the mixture into serving bowls.
- Allow the natillas to cool at room temperature for a few minutes before refrigerating for at least 2 hours to set.
- Before serving, sprinkle with ground cinnamon for garnish.
