Steps
- In a saucepan, combine coconut milk, erythritol, cinnamon powder, and a pinch of salt over medium heat. Stir until the mixture is warm but not boiling.
- In a separate bowl, whisk the egg yolks until they are well beaten.
- Slowly pour the warm coconut milk mixture into the bowl with the egg yolks while continuously whisking to temper the yolks.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens (about 5-7 minutes).
- Add the vanilla extract and xanthan gum, whisking until fully combined and smooth.
