  • Erythritol - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Xanthan gum - 1/4 teaspoon
  • Pinch of salt

Steps

  1. In a saucepan, combine coconut milk, erythritol, cinnamon powder, and a pinch of salt over medium heat. Stir until the mixture is warm but not boiling.
  2. In a separate bowl, whisk the egg yolks until they are well beaten.
  3. Slowly pour the warm coconut milk mixture into the bowl with the egg yolks while continuously whisking to temper the yolks.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens (about 5-7 minutes).
  5. Add the vanilla extract and xanthan gum, whisking until fully combined and smooth.
  6. Remove from heat and let it cool slightly before transferring to serving dishes.
  7. Chill in the refrigerator for at least 2 hours before serving.
